Almond & Dark Chocolate Pineapple Chunks

This is such a quick and easy recipe using only 3 ingredients. With the added bonus of being gluten free, dairy free and vegan friendly!
Servings: 16 Pineapple Chunks


  • ½ Pineapple, chopped into 16 chunks
  • 2 Tbsp Almond nibs


  • Have a flat baking tray or casserole dish ready
  • Break up the chocolate and place in a heat proof bowl
  • Fill a small saucepan with water, place the heatproof bowl with chocolate on top and bring to the boil, stirring until the chocolate is melted.
  • Using a teaspoon, cover the bottom half of each pineapple with the melted chocolate and spread out across your prepared tray
  • Evenly sprinkle with the almond nibs
  • Place in the fridge to set for at least one hour
