Easy Apple Quinoa with a Mustard & Apple Cider Vinegar Dressing

A healthy and refreshing salad with a kick. Made with the purest ingredients this works as the perfect light meal or side salad. It’s also naturally gluten free dairy free, vegan & vegetarian friendly

For the Salad

  • 1 Cup of quinoa
  • 1 ½ Cup of Knorr vegetable stock
  • 3 Cups of kale, roughly chopped
  • 2 Cups of Keeling’s apples, washed and sliced
  • ½ Red Onion, sliced
  • ½ Cup of walnuts

For the Dressing

  • ¼ Cup of extra virgin olive oil
  • ¼ Cup of Bragg’s apple cider vinegar with mother 
  • ¼ Cup of wholegrain mustard 
  • 2 Cloves of garlic, crushed


  • To a saucepan add the quinoa and vegetable stock, bring to the boil and then down to a simmer until the water reduces, stirring continuously 
  • Once cooked fluff with a fork and add to a salad bowl and combine in the kale, apples, onion and walnuts.
  • To make the dressing add the olive oil, apple cider vinegar, mustard and garlic to a bowl and stir to combine 
  • Add the dressing to the salad, toss to combine and enjoy!
