Easy Breakfast Egg Muffins

These are so quick and easy for your morning breakfast prep and to bring on the go with you.

  • 12 Small Eggs
  • 1 Pinch Salt
  • 1 Pinch Black Pepper
  • 1 Tbsp Chopped Chives/Parsley
  • 1 Large Red Onion Finely Chopped
  • 1/2 Cup Cheddar Cheese Grated
  • 1 Tbsp Extra Virgin OliveOil


  • Preheat your oven to 180°Celcius
  • Take your 12 well muffin tin and brush the tin wells with oil to prevent the muffins from sticking
  • Evenly add the filling ingredients throughout the muffin tin wells
  • Add 1 egg over the top until they are approximately ¾ full
  • Bake in the oven for approximately 20 (fan assisted) - 25 minutes (non fan assisted) until set and just starting to brown .
