Easy Chickpea & Guacamole Sweet Potatoes

This is such a tasty and versatile recipe which can be enjoyed as a healthy lunch or dinner. With chickpea and sweet potato it’s great source of plant based protein. It also has the added bonus of being gluten free, dairy free, vegan & vegetarian friendly.

Ingredients

  • 4 Sweet Potatoes
  • 200 Grams Chickpeas
  • 1 Tbsp Olive oil
  • 1 Tsp Salt
  • 1 Tsp Black pepper
  • ½ Tsp Cumin
  • 1 Tsp Garlic powder
  • 2 Tbsp Tahini

Instructions

  •  Preheat oven to 190∞Celcius 
  • Slice the sweet potatoes down the middle, place on a lined baking tray (with a little drop of olive oil to prevent them sticking) and bake for 45 minutes.
  • Meanwhile, drain the chickpeas, rinse with cold water and remove the skin
  • To a large bowl add the prepared chickpeas, ½ tablespoon of olive oil, salt, black pepper, cumin, tahini and lightly stir
  • Line a baking tray with parchment paper and evenly spread the chickpea mixture and bake for 25-30 minutes, stirring mid-way through, until browned
  • Top the sweet potatoes with the guacamole and chickpeas and enjoy!
