Easy Chocolate & Coconut Chia Pudding

This is a delicious recipe which can be eaten as a breakfast but also makes a beautiful dessert and keeps in the fridge for 3-4 days so great for those who meal plan. (gluten, dairy free, vegetarian & vegan friendly)

  • 1 Cup Raw cocoa
  • 2/3 Cup Chia seeds
  • 3 Tbsp Honey or agave syrup
  • 1 Tbsp Vanilla extract
  • 1 ½ Tins of coconut milk (600ml)
  • ½ Cup Shredded coconut
  • Fruit for Topping


  • Add the raw cocoa, honey/agave syrup, vanilla extract and salt to a bowl and stir to combine
  • Stir the coconut milk, add to the mixture and stir
  • Add the chia seeds and stir to combine
  • Leave to set in the fridge for 15-20 minutes
  • Stir again and transfer to a jar or glass
  • Top with the coconut and fruit of your choice, enjoy!
