Easy Chocolate Gingerbread Bites

Made with the purest ingredients, these no bake gingerbread cookie dough bites are the perfect healthy treat or dessert. They’re also gluten free dairy free, vegetarian and vegan friendly

Ingredients

  • 1 ½ Cups Almonds, chopped
  • ½ Cup Oats
  • 1 Teaspoon Cinnamon 
  • 1 Teaspoon Ginger
  • ¼ Teaspoon Salt
  • 10 Medjool Dates, pitted and chopped 
  • 1 ½ Tablespoons maple syrup
  • 1 Tablespoon Water
  • 1 Teaspoon vanilla extract
  • 1 Cup Dark chocolate chips
  • 1 Tablespoon coconut oil 
  • ¼ Cup Raspberries
  • 1 Gingerbread biscuit, chopped into crumbs

Instructions

  • Line a baking tray with parchment paper 
  • To a blender add the oats, almonds, cinnamon, ginger and salt
  • To the oats mixture, add the dates, maple syrup, water, vanilla extract and blend until you get a soft dough
  • To a heatproof bowl add the chocolate chips and coconut oil and melt in the microwave for 1 minute
  • Roll the dough into balls and using a kebab skewer/tooth pick dip the balls into the chocolate and until totally coated and place on the baking tray, continue until all of the dough has been used up 
  • Top each one with the gingerbread crumb
  • Place in the fridge for 20 minutes to set and enjoy!
