Easy Chunky Guacamole Recipe

This is such a delicious and nutritious recipe which can be used as a healthy dip, sandwich filling or as a savoury topping. With the bonus of being gluten free, dairy free, vegan & vegetarian friendly.

Ingredients

  • 3 Large ripe avocados, peeled and chopped
  • 1 Tbsp Fresh lemon juice
  • 1 Cup Red onion, finely chopped
  • 1 Cup of Tomatoes, finely chopped
  • 1 Tsp of paprika
  • ½ Tsp of garlic powder
  • ½ Tsp of cumin 
  • ½ Cup of coriander, finely chopped
  • 1 Tsp of salt
  • 1 Tsp of pepper to season 

Instructions

  •  To large bowl add the avocado and mash 
  • Add lemon juice, paprika, garlic powder, cumin, salt & pepper & stir
  • Add tomatoes, onions, coriander and stir
  • Serve with tortilla chips, use as a sandwich filling or as a savoury topping
