Easy Dark Chocolate & Coconut Macaroons

If you’re looking for an easy, healthy and tasty treat recipe this is the one. With a beautiful combination of coconut, matcha and dark chocolate these are so perfect for on the go snacks as well as a light dessert. They’re  also gluten free, dairy free, vegan and vegetarian friendly

Ingredients

  • 1 ½  Cups of shredded coconut
  • 3 Tablespoons of matcha powder 
  • ¼ Teaspoon of salt
  • 4 Tablespoons of honey/agave
  • 1 Tablespoon of chia seeds
  • 1 ½ Cups of Dark Chocolate (70% +)

Instructions

  • Line a baking tray with parchment paper and preheat the oven to 180℃ 
  • To large bowl, add the coconut, matcha and salt and stir to combine
  • Add they honey/agave until the mixture begins to stick together (add more if needed)
  • Using your hands/ice cream scoop or a cookie cutter, shape the mixture into macaroon balls  and spread across the prepared backing tray
  • Bake for 8-10 minutes or until they have very slightly browned, remove and set aside
  • Place the dark chocolate in a heat proof bowl over boiling water and begin to melt (if it gets too thick add a little coconut milk to smooth it out)
  • Using a spoon coat the bottom half of the macaroons with the dark chocolate and place in the fridge for 30 minutes to set and enjoy!
