Easy Fruity Spinach Salad & Citrus Dressing

This is an easy and refreshing salad with a fruity twist. With spinach, berries and mandarin oranges it’s packed full of nutritious vitamins and minerals. It’s also suitable for vegetarians, vegans, dairy free and gluten free diets.

  • 4 Cups Fresh spinach
  • 3 Mandarin oranges, peeled and segmented
  • ½ Cup Raspberries
  • ½ Cup Strawberries, sliced
  • ½ Cup Pecans, chopped in to halves
  • ½ Cup Feta cheese, cubed

For the Dressing

  • Juice of 2 mandarins (simply slice down the middle & squeeze)
  • ½  Cup Olive oil
  • 2 Tbsp Balsamic vinegar
  • 2 Tbsp Honey 


  • For your salad - In a large salad bowl add your spinach, mandarin oranges, raspberries, strawberries, pecans and feta cheese.
  • For your dressing – In a separate bowl add your olive oil, balsamic vinegar, mandarin juice and honey and stir
  • Add your dressing to your salad and enjoy!
