Easy Green Vegetable, Coconut & Ginger Soup

This recipe is a great way to pack in valuable nutrients with pure and delicious ingredients. It’s also delicious and really easy to make. Gluten free, dairy free, vegan and vegetarian friendly.

  • 1 Tablespoon of coconut oil
  • 1 Large white onion, peeled and diced
  • 1 Large courgette, chopped
  • 2 Cups of celery, chopped
  • 1 Large apple, chopped
  • 1 Teaspoons of cumin
  • 1 Tablespoon of ginger
  • 1 Handful of coriander leaves
  • 4 Cups of vegetable stock (I use x2 Knorr gluten free vegetable stock pots and 4 cups of boiling water)
  • 4 Handfuls of fresh kale
  • 400ml Tin of coconut milk (I use the Amoy one)


  • To a large saucepan your coconut oil and heat on a medium heat
  • Add your onions and sauté until lightly browned
  • Add the courgette, celery, onion and apple to the pot and stir
  • Add the cumin, ginger, coriander and stir to combine 
  • Add the vegetable stock, stir, bring to the boil and leave to simmer for 10-15 minutes
  • Add the kale and stir
  • Add the coconut milk and continue to simmer for another 5-6 minutes
  • Remove from the heat and blend using an immersion (stick) blender (keep it chunky as it leaves an extra bite)
