Easy No Bake Apricot & Coconut Bars

This is such a quick, easy and tasty treat. With a beautiful combination of apricot and coconut these no bake squares are the perfect for a healthy snack or dessert.

  • 4 Cups of dried apricots
  • 4 Cups of desiccated coconut
  • 4 Tablespoons of desiccated coconut for topping


  • Add the ingredients to a bowl and stir to combine
  • Add the combined ingredients to a blender and blend until you achieve a doughy consistency (you may want to do this in batches you have a smaller blender)
  •  Line a small baking tray with parchment paper
  • Transfer the mixture to the baking tray and press down to compact it
  • Sprinkle with the desiccated coconut and leave in the fridge to set over night
  • When ready, remove from the fridge cut into squares and enjoy
