Easy Oaty Matcha Bars

This is such an easy no bake raw food recipes. Both light and filling it’s delicious as a breakfast bar, healthy treat or dessert, so perfect! They’re also naturally gluten free, dairy free, vegan and vegetarian friendly.

Ingredients

Base

  • 1 Cup of oats (gluten free if needed)
  • ½ Cup of desiccated coconut
  • 8 Medjool dates, soaked for 3 hours
  • 2 Tbsp of almond butter
  • 2 Tbsp of coconut milk (from the carton)

Matcha Topping

  • 1 Cup of cashews, soaked for 3 hours
  • 1 Cup of Coconut milk (from the tin)
  • ¼ Cup of honey/agave
  • ¼ Cup of honey/agave
  • 1 Tsp of vanilla extract
  • 2 Tbsp of matcha powder 

Instructions

  • Line a small baking tray with parchment paper 
  • To a blender add all of the base ingredients and combine until smooth
  • Transfer the base mixture to your prepared baking tray and firmly press the mixture down to compact it, particularly the sides (this will ensure that the base stays together)
  • Pop the base mixture in the freezer whilst you prepare your topping.
  • To your blender add all of the matcha topping ingredients and blend until thick and smooth
  • Take your base mixture out and evenly spread the topping on top
  • Pop the tray back in the freezer and leave to set for 5 hours and enjoy!
