Easy Orange & Cranberry Quinoa Salad

Shake up your salad with this delicious quinoa recipe. Packed with delicious flavours and ingredients it works beautifully for lunch or a light dinner. It’s also naturally gluten free, dairy free, vegan and vegetarian friendly.

Ingredients

Salad

  • ½ Cup of raw quinoa 
  • 1 Cup of chickpeas, rinsed and drained
  • 4 Mandarin oranges, peeled and broken into segments
  • ½ Cup of cranberries
  • ½ Red onion, diced
  • ½ Cup of almond flakes

Dressing 

  • ¼ Cup of balsamic vinegar
  • ¼ Cup of extra virgin olive oil¼ Cup of extra virgin olive oil
  • 1 Clove of garlic, crushed
  • ½ Cup of fresh orange juice
  • ¼ of chopped mint for garnish

Instructions

  • To a pot add the quinoa and 2 cups of water, bring to the boil and leave to simmer for 8-10 minutes, stirring continuously until the water has been absorbed, set aside to cool
  • To a bowl add the balsamic vinegar, olive oil and garlic  and orange juice & stir to combine
  • In a separate bowl add the cooled quinoa, chickpeas, red onion and almonds and mix
  • Add your dressing, mix to combine, and top with chopped mint leaves
