Easy Pomegranate & Pistachio Compote

This is such an easy and nutritious recipe which is gluten free and vegetarian friendly. So versatile it can be enjoyed as a breakfast, snack or as a healthy dessert, enjoy!

Ingredients

  • 2 Cups Oats (gluten free/pure oats if opting for gluten free option)

  • 2 Tbsp Maple syrup
  • 12 Tbsp Greek yogurt
  • 8 Tbsp Pomegranate seeds
  • 1 Tbsp Pistachios

Instructions

  • Add 2 cups of oats to a baking tray and coat with 2 tablespoons of maple syrup
  • Bake at 180∞Celcius for 30 minutes, stirring mid-way through to ensure all the oats are toasted
  • In 4 glasses evenly spread ¾ of your toasted oats
  • Layer 2 heaped teaspoons of your Greek yogurt on top
  • Evenly layer your pomegranate seeds on top (your glass should be ¾ full)
  • Top with the remaining toasted oats mixture
  • Evenly top with 1 tablespoon of pistachios

Notes

Serve with a little honey and enjoy for breakfast, as a snack or healthy dessert
