Easy Raw Carroty Coconut Balls

Not along are these super quick and easy but they taste just like carrot cake, a healthy version of course. They’re amazing as a healthy breakfast bite, snack as a healthy treat and they are amazing for meal preppers!! They’re also gluten free, dairy free, vegan and vegetarian friendly!

Servings: 9 Balls

Ingredients

  • 1 Cup of raw soaked cashews (soak overnight is best)
  • ½  Cup of soaked Medjool dates (soak for about 2 hours)
  • 1 Cup finely diced carrots
  • 1 ½ Cups pure oats
  • ½ Cup of desiccated coconut
  • 1 Tsp of cinnamon

Topping

  • 1 Tsp of cinnamon

Instructions

  • Add all ingredients to a blender and blend until a smooth(ish) consistency, some chunky bits are fine. You will need to stop and stir the mixture 3-4 times to make sure it all gets blended equally
  • Roll the mixture into balls 
  • Roll them in the desiccated coconut to coat them and enjoy

Notes

They keep really well  in an airtight container in the fridge for 3-4 days!!
