Easy Rhubarb & Raspberry Compote

This is such an easy and delicious recipe which works well on cereals, yogurts and crumbles. Raspberry and rhubarb are not only a perfect pairing but packed with nutrition

Ingredients

  • 2 Cups of diced rhubarb
  • 1 Cup of raspberries
  • Juice of 1 lemon
  • Zest of one lemon 
  • 2 Tsp of vanilla essence
  • 2 Tsp of cornstarch

Instructions

  • Add the rhubarb, raspberries, coconut sugar, lemon juice and zest to a saucepan at a medium heat.
  • Bring to the boil and then allow to simmer for 10-12 minutes
  • Add the corn starch and cook for a further 5 minutes.
  • Serve on yogurt, cereals or crumbles
