Easy Spicy Sweet Tofu

This is an easy, nutritious and delicious recipe, it’s a great cupboard meal and perfect for all the family or great for meal prepping as it freezes really well. It’s also gluten free, dairy free, vegetarian and vegan friendly.

Ingredients

  • 1 ½ Heaped Cup (200g) Firm tofu, cubed (use 4 breasts of chicken as a meat alternative)
  • 4 Tbsp Extra virgin olive oil
  • 4 Spring onions, chopped
  • 1 Cup Frozen peas
  • 3 Cloves Garlic, crushed/chopped
  • 1 Tsp Ginger
  • 2 Tbsp Soy sauce
  • 2 Tbsp Siracha sauce
  • 2 Tbsp Balsamic vinegar
  • 2 Cups Wholegrain rice or Rice noodles (to serve)

Instructions

  • Heat your 2 tablespoons of the oil in pan on a high heat, add tofu, frying until browned and reduce the heat to keep warm.
  • In a separate pan add the remaining 2 tablespoons of oil on a low to medium heat, add the spring onions, peas, garlic, ginger, balsamic vinegar, soy and siracha sauces for 2-3 minutes 
  • Add the tofu to the sauce and fry on a low heat for another 2-3 minutes until combined
  • Serve on a bed of wholegrain rice or rice noodles
