Easy Spinach Avocado Quinoa Bites

Ingredients

  • 1 Cup of quinoa, uncooked
  • 1 Large ripe avocado, peeled and core removed 
  • 3 ½ Cups of spinach, washed 
  • 2/3 Cup of almond flour
  • 1 Tbsp of chia seeds
  • 2 ½ Tbsps of water

Instructions

  • In a small bowl add the chia seeds and 2 ½ tablespoons of water and leave to gel
  • To a pot add your quinoa and 2 cups of water, bring to the boil and then reduce to a low simmer for 8-10 minutes or until all of the water has been absorbed (keep an eye on it stir continuously)
  • Once the quinoa is ready set it aside to cool
  •  To a blender add your avocado and spinach and blend until smooth
  • Add the almond flour and blend to combine
  • Transfer the spinach and avocado mixture to a large mixing bowl and add the quinoa
  • Add the gelled chia (this acts as a binding agent)
  • Stir to combine all of the ingredients
  • Using your hands, mould all of the ingredients into balls (you can make 20 small or 10 large ones, it’s totally up to you)
  • Line a baking tray with parchment paper and transfer them over
  • Bake at 180 ℃ for 20 minutes or until slightly browned (do keep an eye on them as each oven is different)
  • Enjoy as an addition to your lunch, dinner or as a little on the go snack!
