Easy Spinach Chia Pudding

This is a delicious recipe which can be eaten as a breakfast but also makes a beautiful dessert and keeps in the fridge for 3-4 days so great for those who meal plan.10

  • 4 Pit-less Medjool dates, chopped
  • 2 Cups Coconut milk 
  • 2 Cups Spinach 
  • 1 Tsp Vanilla extract
  • 8 Tbsp Chia seeds
  • Fruit for topping


  • To a blender add the dates, spinach coconut milk and vanilla extract and blend until smooth
  • In a bowl add your chia seeds and blended mixture and stir
  • Place in the fridge for 8 hours
  • Divide into serving glasses or bowls and top with chopped fruit
  • Stir again and transfer to a jar or glass
  • Top with the coconut and fruit of your choice, enjoy!
