Easy Sweet & Spicy Tofu

Packed with delicious and nutritious flavours and ingredients this is the perfect dish. It’s great for meal prepping too! As a bonus it’s also naturally gluten free dairy free, vegetarian and vegan friendly!

Ingredients

  • 3 Tablespoons Soy sauce
  • 2 Tablespoons Siracha sauce
  • 1 Tablespoon White wine vinegar
  • 3 Cloves of garlic, crushed
  • 280g Extra firm tofu, cubed

To Serve

  • 2 Cups Wholegrain rice, cooked
  • Mint Leaves
  • Lime

Instructions

  • To a large bowl add the soy sauce, rice wine vinegar, siracha, garlic, spring onion, lime juice and stir
  • Add the tofu, stir to combine and marinade for 30 mins 
  • Heat the olive oil in a large pan, add the tofu and fry for 6-8 minutes until golden 
  • Serve on a bed of wholegrain rice and top with lime and mint leaves
