Kale Pearl Barley With Vegetable Sausages

Both nutritious and delicious this pearl barley recipe is the perfect comfort food. Topped with vegetable sausages it’s the quick and easy meal that can be enjoyed by all.

Ingredients

  • 2 Tablespoons of extra virgin olive oil
  • ¾ Cup of spring onion, chopped
  • 3 cloves of garlic, crushed
  • 1 Red pepper, cubed
  • Zest of 1 lemon
  • Juice of ½ a lemon
  • 1 Teaspoon of rosemary
  • 1 Teaspoon of thyme
  • 2 ½ Cups of pearl barley
  • 500ml Vegetable stock (I use the Knorr Vegetable Stock Pots)  Find out more about Knorr Vegetable Pots
  • 6 Vegetable sausages (I used the Gosh Veggie Sausages with Sage, Lentil & Black Pepper) Find out more about Gosh Veggie Sausages
  • 1 Courgette, cubed
  • 5 Cups of kale, stalks removed and chopped

Instructions

  • Heat the olive oil in a large saucepan on a medium heat
  • Add the spring onions and sautee for 2 minutes, then add the pepper, garlic, lemon, zest, rosemary and thyme and sautee for another 2 minutes
  • Add the pearl barley and vegetable stock, bring to the boil and then reduce to a simmer for 20 minutes, constantly stirring
  • Add the vegetable sausages to a baking tray and bake for 15 minutes at 180
  • Add the courgettes and kale to the pot and cook for another 10 minutes, constantly stirring until the kale has wilted slightly.
  • Plate up the pearl barley, top with the vegetable sausages and enjoy!
