Mini Gluten Free Scones

These bite size scones are absolutely perfect and perfect for breakfast, as a healthy treat or snack, as a post work out recovery snack and are great for meal planning as they keep for 3-4 days in an airtight container. (gluten free, dairy free, vegetarian & vegan friendly)

Ingredients

  • 1 ½ Cups Ground oats
  • ¼ Cup Coconut flour
  • 3 Tbsp Coconut sugar
  • 1 ½ Tsp Baking powder
  • ¼ Tsp Salt
  • 3 Tbsp Coconut oil (solid, room temperature)
  • ½ Cup Water

Instructions

  • Preheat oven to 190°Celcius
  • To a blender add your ground outs, coconut flour, coconut sugar, baking powder, salt and lightly blend to mix the ingredients (to stir during mixing to ensure ingredients combine properly)
  • Add your coconut oil and lightly blend
  • Add the water and lightly blend (again stop and stir)
  • Transfer the dough to a chopping board and lightly dust with coconut flour
  • Lightly press the dough with your hands and flatted to about half an inch
  • Using a cookie cutter, cut out the pastry into circles
  • Place on a baking tray lined with parchment paper
  • Bake in oven for 12 minutes (set a timer)
  • Serve with reduced sugar jam/marmalade

Note: if you don’t have ground oats, simply put regular oats in your blender and until they become a fine powder
