No Bake Dark Chocolate Coconut Squares

These beautiful little squares are seriously similar to bounty bars, absolutely delicious and so easy to make. A perfect on the go little healthy treat or can be served as a dessert. They’re also naturally gluten free, dairy free, vegan and vegetarian friendly.

Ingredients

Squares

  • 1 Cup of unsweetened desiccated coconut
  • 4 Tbsp of honey/agave
  • 2 Tbsp of melted coconut oil
  • 1 Tbsp of vanilla extract
  • ¼ Tsp of salt

Chocolate Topping

  • ½ Cup of Dark Chocolate Chips (dairy free if needed)
  • 1 Tsp of coconut oil
  • ¼ Cup of coconut milk

Instructions

  • To a blender add the desiccated coconut, honey/agave, melted coconut oil and salt and blend until combined.
  • Remove from blender and using a cookie cutter mould into squares, be sure to compact it down well by pressing down with a spoon.
  • Put the coconut squares in the freezer for 5-10 minutes to set slightly
  • Meanwhile to a heat proof bowl add the chocolate chips and coconut oil and melt over a pot of boiling water, add the milk to thin it out slightly.
  • Remove the coconut squares from the freezer an using a spoon evenly spread the chocolate across them.
  • Place back into the freezer to set for another 10-15 minutes and enjoy
