No Bake Mini Lime & Avocado Pies

With avocado and beautiful hints of lime, this is an easy and healthy recipe which is perfect for breakfast, a healthy treat or dessert. It’s also gluten free, dairy free, vegetarian and vegan friendly.

Ingredients

For Crust

  • 1 Cup Regular or gluten free oat flour (blended oats)
  • 8 Pitted dates
  • 2 Tbsp Melted coconut oil

For Topping

  • 2 Ripe avocados
  • ½ Tin Coconut milk
  • Juice of one lime
  • ½ Cup Coconut oil
  • 2 Tbsp Honey or agave syrup
  • ¼ Tsp Matcha powder

Garnish

  • Sliced lime for garnish 

Instructions

  • To a blender add the crust ingredients until combined (stir a couple of times in between)
  • Add muffin cases to a muffin tray if you have a silicon muffin tray there’s no need.
  • Evenly spread the crust to each of the muffin tray wells and use a spoon to press down firmly and compact it so it sets properly.
  • To a clean blender add your filling mixture and blend until combined, again stirring a few times mid-way through.
  • Evenly spread the filling mixture to the top of each muffin well.
  • Carefully place in the freezer, ensuring it is level for at least 2 hours to allow them to set.
  • Garnish with the sliced lime and enjoy.
