Protein Boosted Spinach Banana Muffins

These muffins are so versatile and nutritious boosted with fruit, vegetables and protein they can be used for breakfast or as a healthy green snack. They are also Gluten and Dairy Free

Ingredients

  • 2 Cups Pure/Gluten Free Oats
  • 30 Grams Puritian Vanilla/Strawberry Protein Powder You can order Puritian here: https://www.purition.co.uk/?aff=32
  • 1/4 Cup Ground Flaxseed
  • 2 Tbsp Baking Soda
  • 1/4 Tbsp Salt
  • 1 Tbsp Ground Cinnamon
  • 1/2 Cup Coconut Sugar/Xylitol (Natural Sweetener)
  • 1/2 Cub Coconut Milk
  • 2 Cups Packed Spinach Leaves
  • 1/4 Cup Coconut Oil
  • 1 Extra Ripe Large Bananas
  • 2 Eggs/Egg Replacer Equivalent 

Instructions

  •  Preheat oven to 190° Celcius
  • Grease or Line a muffin tin
  • Place your oats in a blender and blend until they have reached a flour consistency, then transfer to a large mixing bowl 
  • In your blender add your coconut milk, the 2 cups of spinach and blend together until you achieve a smooth consistency
  • Add bananas & coconut oil and blend until you achieve a smooth consistency 
  • Add vanilla essence and eggs (or egg replacer) and blend until you achieve a smooth consistency
  • Pour wet ingredients into the dry mixture and continue to stir until smooth
  • Carefully fill your muffin batter into the muffin tray up to almost half way
  • Bake for approximately 20-25 minutes
