Eggs/Egg Replacer Equivalent
Instructions
Preheat oven to 190° Celcius
Grease or Line a muffin tin
Place your oats in a blender and blend until they have reached a flour consistency, then transfer to a large mixing bowl
In your blender add your coconut milk, the 2 cups of spinach and blend together until you achieve a smooth consistency
Add bananas & coconut oil and blend until you achieve a smooth consistency
Add vanilla essence and eggs (or egg replacer) and blend until you achieve a smooth consistency
Pour wet ingredients into the dry mixture and continue to stir until smooth
Carefully fill your muffin batter into the muffin tray up to almost half way
Bake for approximately 20-25 minutes
