Easy Chickpea Masala
This is an easy, nutritious and delicious recipe, it’s a great cupboard meal and perfect for all the family or great for meal prepping as it freezes really well. This recipe is gluten, dairy free, vegetarian & vegan friendly

Servings: 4 Portions
- 1 Can Chickpeas, drained
- 1 Can Chopped tomatoes
- 1 Cup Coconut milk
- 6 Garlic cloves·
- 4 Tbsp Garam Masala
- 1 Cup Onions, chopped
- 1 Pepper, chopped
- 10 Grams Coconut oil
Heat your coconut oil in a pan
Add your chopped onions and peppers and fry until lightly browned
Add your chickpeas, tomatoes, coconut milk, garam masala & stir
Season with salt and pepper
Gently simmer for10-12 minutes until the liquid reduces to a thick sauce
Serve on a bed of wholegrain rice and enjoy!
