Easy Chocolate & Coconut Chia Pudding
This is a delicious recipe which can be eaten as a breakfast but also makes a beautiful dessert and keeps in the fridge for 3-4 days so great for those who meal plan. (gluten, dairy free, vegetarian & vegan friendly)

- 1 Cup Raw cocoa
- 2/3 Cup Chia seeds
- 3 Tbsp Honey or agave syrup
- 1 Tbsp Vanilla extract
- 1 ½ Tins of coconut milk (600ml)
- ½ Cup Shredded coconut
- Fruit for Topping
Add the raw cocoa, honey/agave syrup, vanilla extract and salt to a bowl and stir to combine
Stir the coconut milk, add to the mixture and stir
Add the chia seeds and stir to combine
Leave to set in the fridge for 15-20 minutes
Stir again and transfer to a jar or glass
Top with the coconut and fruit of your choice, enjoy!
