Easy Carrot, Orange & Ginger Soup
This is such a delicious and healthy recipe. With a beautiful combination of carrot, orange and ginger, this soup is not only packed full of nutrients but also creamy, filling and super easy to make. (gluten, dairy free, vegetarian & vegan friendly)

- 700 Grams Carrots, chopped
- 2 Large stalks of celery
- 1 Medium Onion
- 2 Garlic cloves
- 2 Tsp Ginger
- The Juice of 1 orange
- The Zest of 1 orange
- 1 Ltr Vegetable stock (I used the Knorr Stockpot
- 1 Tbsp Extra virgin olive oil
- Salt & pepper to season (if desired)
- Greek Yoghurt (for topping)
- Parsley (for topping)
Add your oil to a large pan and heat on low to medium heat
Add your carrots, celery, ginger, garlic and season with salt & pepper
Ensure on a medium heat and cook for 4-5 minutes
Add the juice of one orange and it’s zest
Add the vegetable stock
Cook on a medium heat for 20-25 minutes or until the vegetables have softened
Turn off the heat and use an immersion blender to blend to a thick and creamy consistency
Serve topped with Greek yogurt and fresh or dried parsleyEnjoy
