Easy Carrot, Orange & Ginger Soup

This is such a delicious and healthy recipe. With a beautiful combination of carrot, orange and ginger, this soup is not only packed full of nutrients but also creamy, filling and super easy to make. (gluten, dairy free, vegetarian & vegan friendly)

Ingredients

  • 700 Grams Carrots, chopped
  • 2 Large stalks of celery
  • 1 Medium Onion
  • 2 Garlic cloves
  • 2 Tsp Ginger
  • The Juice of 1 orange
  • The Zest of 1 orange
  • 1 Ltr Vegetable stock (I used the Knorr Stockpot
  • 1 Tbsp Extra virgin olive oil 
  • Salt & pepper to season (if desired)
  • Greek Yoghurt (for topping)
  • Parsley (for topping)

Instructions

  • Add your oil to a large pan and heat on low to medium heat
  • Add your carrots, celery, ginger, garlic and season with salt & pepper
  • Ensure on a medium heat and cook for 4-5 minutes
  • Add the juice of one orange and it’s zest
  • Add the vegetable stock
  • Cook on a medium heat for 20-25 minutes or until the vegetables have softened
  • Turn off the heat and use an immersion blender to blend to a thick and creamy consistency
  • Serve topped with Greek yogurt and fresh or dried parsley
