Easy Avocado Minty Mousse
A healthy alternative to your regular mousse this version has beautiful flavours of avocado, coconut and topped with mint sprigs. It’s absolutely perfect as a no bake healthy treat or dessert. Suitable for everyone it’s gluten free, grain free, dairy free, vegan and vegetarian friendly and still tastes absolutely amazing!!! (gluten free, dairy free, vegetarian & vegan friendly)

- 150 Grams 70% + chocolate (naturally dairy free)
- 20 Grams 70% + chocolate (for topping)
- 2 Large ripe avocados
- 2 Tbsp Cocoa powder
- 3 Tbsp Maple syrup
- 2 Tsp Vanilla extract
- 100 ml Coconut milk (from tin)
- Fresh mint leaves
Melt your 150g of chocolate over a bain marie (heat proof bowl over a pot of boiling water) and allow to cool slightly
Peel and de-stone your avocados and chop into small chunks (this helps it blend better)
To your blender add the avocado, cocoa powder, maple syrup, vanilla extract, coconut milk and blend until smooth (stop and stir a few times during blending to ensure the ingredients combine properly)
Add the slightly cooled chocolate and lightly blend to combine
Transfer to 6 small bowls
Place in the fridge for at least one hour
Top with shards of dark chocolate and mint leaves & enjoy!!
