Easy Avocado Minty Mousse

A healthy alternative to your regular mousse this version has beautiful flavours of avocado, coconut and topped with mint sprigs. It’s absolutely perfect as a no bake healthy treat or dessert. Suitable for everyone it’s gluten free, grain free, dairy free, vegan and vegetarian friendly and still tastes absolutely amazing!!! (gluten free, dairy free, vegetarian & vegan friendly)

Ingredients

  • 150 Grams 70% + chocolate (naturally dairy free)
  • 20 Grams 70% + chocolate (for topping)
  • 2 Large ripe avocados
  • 2 Tbsp Cocoa powder
  • 3 Tbsp Maple syrup
  • 2 Tsp Vanilla extract
  • 100 ml Coconut milk (from tin)
  • Fresh mint leaves

Instructions

  • Melt your 150g of chocolate over a bain marie (heat proof bowl over a pot of boiling water) and allow to cool slightly
  • Peel and de-stone your avocados and chop into small chunks (this helps it blend better)
  • To your blender add the avocado, cocoa powder, maple syrup, vanilla extract, coconut milk and blend until smooth (stop and stir a few times during blending to ensure the ingredients combine properly)
  • Add the slightly cooled chocolate and lightly blend to combine
  • Transfer to 6 small bowls
  • Place in the fridge for at least one hour
  • Top with shards of dark chocolate and mint leaves & enjoy!!
