Rinse lentils, transfer to a pot, add 3.5 cups of water, bring to the boil and leave to simmer (approximately 25-30 mins)
Rinse rice, transfer to a pot and 1 Cup of water, bring to the boil and leave to simmer
When done leave both the lentil and rice to cool
In a frying pan heat a tablespoon of extra virgin olive oil, add the onion and garlic and fry until browned
To a large bowl add your lentils, rice, fried onion & garlic, 1 tablespoon of olive oil, paprika, nutritional yeast, water, salt & pepper & stir to combine
Transfer to a blender or using an immersion blender blend down the mixture slightly (stirring every couple of pulses), be sure not to over blend as some chunky bits add an extra bite
Using a spoon & cookie cutter shape the burgers and transfer to a baking try lined with tin foil
Bake for 12-15 minutes until slightly browned
Serve with rice, veggies or in a burger bun, enjoy
