Easy Lentil & Rice Burgers

This is an easy veggie burger recipe with pure ingredients. Both the lentils and the rice provide great sources of protein. It’s also gluten free, dairy free, vegetarian and vegan friendly.

Ingredients

  • 1 Cup Brown rice, uncooked
  • ¼ Cup Green lentils, uncooked
  • ½ Cup Ground oats (oat flour)
  • 1 Large Onion, finely diced
  • 4 Garlic cloves, crushed
  • ½ Cup Nutritional yeast 
  • 2 Tbsp Sweet smoked paprika
  • 2 Tbsp Water
  • 2 Tbsp Extra virgin olive oil
  • Salt & Pepper for seasoning

Instructions

  • Rinse lentils, transfer to a pot, add 3.5 cups of water, bring to the boil and leave to simmer (approximately 25-30 mins)
  • Rinse rice, transfer to a pot and 1 Cup of water, bring to the boil and leave to simmer
  • When done leave both the lentil and rice to cool 
  • In a frying pan heat a tablespoon of extra virgin olive oil, add the onion and garlic and fry until browned 
  • To a large bowl add your lentils, rice, fried onion & garlic, 1 tablespoon of olive oil, paprika, nutritional yeast, water, salt & pepper & stir to combine
  • Transfer to a blender or using an immersion blender blend down the mixture slightly (stirring every couple of pulses), be sure not to over blend as some chunky bits add an extra bite
  • Using a spoon & cookie cutter shape the burgers and transfer to a baking try lined with tin foil 
  • Bake for 12-15 minutes until slightly browned
  • Serve with rice, veggies or in a burger bun, enjoy
