Easy Spinach Chia Pudding
This is a delicious recipe which can be eaten as a breakfast but also makes a beautiful dessert and keeps in the fridge for 3-4 days so great for those who meal plan.10

- 4 Pit-less Medjool dates, chopped
- 2 Cups Coconut milkÂ
- 2 Cups SpinachÂ
- 1 Tsp Vanilla extract
- 8 Tbsp Chia seeds
- Fruit for topping
To a blender add the dates, spinach coconut milk and vanilla extract and blend until smooth
In a bowl add your chia seeds and blended mixture and stir
Place in the fridge for 8 hours
Divide into serving glasses or bowls and top with chopped fruit
Stir again and transfer to a jar or glass
Top with the coconut and fruit of your choice, enjoy!
