No Bake Mini Lime & Avocado Pies
With avocado and beautiful hints of lime, this is an easy and healthy recipe which is perfect for breakfast, a healthy treat or dessert. It’s also gluten free, dairy free, vegetarian and vegan friendly.

For Crust
- 1 Cup Regular or gluten free oat flour (blended oats)
- 8 Pitted dates
- 2 Tbsp Melted coconut oil
For Topping
- 2 Ripe avocados
- ½ Tin Coconut milk
- Juice of one lime
- ½ Cup Coconut oil
- 2 Tbsp Honey or agave syrup
- ¼ Tsp Matcha powder
To a blender add the crust ingredients until combined (stir a couple of times in between)
Add muffin cases to a muffin tray if you have a silicon muffin tray there’s no need.
Evenly spread the crust to each of the muffin tray wells and use a spoon to press down firmly and compact it so it sets properly.
To a clean blender add your filling mixture and blend until combined, again stirring a few times mid-way through.
Evenly spread the filling mixture to the top of each muffin well.
Carefully place in the freezer, ensuring it is level for at least 2 hours to allow them to set.
Garnish with the sliced lime and enjoy.
