Not along are these super quick and easy but they taste just like carrot cake, a healthy version of course. They’re amazing as a healthy breakfast bite, snack as a healthy treat and they are amazing for meal preppers!! They’re also gluten free, dairy free, vegan and vegetarian friendly!

Ingredients
1Cupof raw soaked cashews (soak overnight is best)
½ Cup of soaked Medjool dates (soak for about 2 hours)
1Cupfinely diced carrots
1 ½Cupspure oats
½ Cup of desiccated coconut
1Tsp of cinnamon
Topping
1Tspof cinnamon
Instructions
Add all ingredients to a blender and blend until a smooth(ish) consistency, some chunky bits are fine. You will need to stop and stir the mixture 3-4 times to make sure it all gets blended equally
Roll the mixture into balls
Roll them in the desiccated coconut to coat them and enjoy

They keep really wellin an airtight container in the fridge for 3-4 days!!
