Easy Orange & Cranberry Quinoa Salad
Shake up your salad with this delicious quinoa recipe. Packed with delicious flavours and ingredients it works beautifully for lunch or a light dinner. It’s also naturally gluten free, dairy free, vegan and vegetarian friendly.

Salad
- ½ Cup of raw quinoa
- 1 Cup of chickpeas, rinsed and drained
- 4 Mandarin oranges, peeled and broken into segments
- ½ Cup of cranberries
- ½ Red onion, diced
- ½ Cup of almond flakes
Dressing
- ¼ Cup of balsamic vinegar
- ¼ Cup of extra virgin olive oil¼ Cup of extra virgin olive oil
- 1 Clove of garlic, crushed
- ½ Cup of fresh orange juice
- ¼ of chopped mint for garnish
To a pot add the quinoa and 2 cups of water, bring to the boil and leave to simmer for 8-10 minutes, stirring continuously until the water has been absorbed, set aside to cool
To a bowl add the balsamic vinegar, olive oil and garlic and orange juice & stir to combine
In a separate bowl add the cooled quinoa, chickpeas, red onion and almonds and mix
Add your dressing, mix to combine, and top with chopped mint leaves
