Easy Gingery Sesame Tofu Lettuce Wraps

This is such a light and tasty recipe. It’s not only bursting with flavour but healthy too. They work great as an easy lunch or as a main meal side dish. They’re  also naturally gluten free, dairy free, vegan and vegetarian friendly

Ingredients

  • 2 Cups of tofu, cubed
  • 2 Teaspoons of extra virgin olive oil
  • 1 Cup of carrot, chopped into sticks
  • 3 Tablespoons of soy sauce
  • 1 Teaspoon of sesame oil
  • 1 Tablespoon of ground ginger
  • 2 Tablespoons of honey/agave
  • 2 Tablespoons of fresh lemon juice
  • 2 Garlic cloves, crushed
  • Iceberg lettuce leaves (They vary in size so as many as you need)
  • 2 Spring onions, chopped

Instructions

  • In a small bowl add the soy sauce, sesame oil, fresh lemon juice, garlic honey/agave and ginger and stir to combine
  • Add in the tofu and gently stir to coat
  • To a large pan heat the extra virgin olive oil and add your tofu mixture and fry for 8-10 minutes or until the tofu has browned
  • Add your carrots and fry for another 5-6 minutes
  • Lay out your lettuce leaves and evenly spread your tofu mixture across them
  • Top with the chopped spring onions and sesame seeds and enjoy!
