Easy Dark Chocolate & Coconut Macaroons

- 1 ½ Cups of shredded coconut
- 3 Tablespoons of matcha powder
- ¼ Teaspoon of salt
- 4 Tablespoons of honey/agave
- 1 Tablespoon of chia seeds
- 1 ½ Cups of Dark Chocolate (70% +)
Line a baking tray with parchment paper and preheat the oven to 180℃
To large bowl, add the coconut, matcha and salt and stir to combine
Add they honey/agave until the mixture begins to stick together (add more if needed)
Using your hands/ice cream scoop or a cookie cutter, shape the mixture into macaroon balls and spread across the prepared backing tray
Bake for 8-10 minutes or until they have very slightly browned, remove and set aside
Place the dark chocolate in a heat proof bowl over boiling water and begin to melt (if it gets too thick add a little coconut milk to smooth it out)
Using a spoon coat the bottom half of the macaroons with the dark chocolate and place in the fridge for 30 minutes to set and enjoy!
