Easy Pecan Pie
This is such an easy grain free dessert recipe made with whole foods. Naturally gluten free, dairy free, vegan and vegetarian friendly.
For the Base
- 2 Cups of pure oats
- 1 Cup of pecans
- ¼ Cup of melted coconut oil
- ¼ Cup of maple/agave syrup
- Pinch of salt
For the Filling
- 2 Cups of Medjool dates, pitted and soaked overnight
- 12 Tablespoons of coconut milk
Preheat the oven to 190℃ and prepare 6 large or 12 small pie trays
Add all of the base ingredients to a blender until well combined
Evenly transfer the base mixture to the pie trays and press well to compact (this will ensure the base holds together)
Bake for 6 minutes, remove and allow to cool
Add the topping mixture to a blender and blend until smooth
Evenly top the base mixture with the topping and place in the fridge to set for an hour and enjoy
