Easy Teriyaki Tofu
With a beautiful combination of pure and delicious ingredients this is the perfect meal. It’s quick, easy and perfect for meal prepping. It’s also naturally gluten free, dairy free, vegan and vegetarian friendly.

Teriyaki Marinade
- 1/3 Cup of soy sauce
- ½ Cup of coconut sugar
- 1 Tablespoon of cornflour
- 3 Tablespoons of honey
- 2 Teaspoons of ginger
Tofu & Vegetables
- 1 Tablespoon of extra virgin olive oil
- 2 Cups of tofu, cubed
- 2 Cups of carrots, peeled and chopped into small sticks
- 1 Cup of sugar snap peas
- 2 Tablespoons of sesame seeds
- 2 Cups of rice noodles
In a bowl combine the marinade ingredients
Add the tofu and leave to marinade for 15 minutes
Heat the oil in a pan at a medium heat and add the marinated tofu, fry for 4-5 minutes
Add the carrots and peas, stir and fry for a further 4 mins
Add the sesame seeds and fry for 1 minute
You can fry your rice noodles in a separate pan or add them to the tofu mix and fry for 2 minutes, serve and enjoy
