Easy Pumpkin Porridge Oats
Give your oats a flavoursome and nutritious boost with this delicious porridge oat recipe. With combinations of fresh pumpkin, pumpkin spice this warming breakfast recipe really hits the spot. As a bonus it’s also gluten free, dairy free, vegan & vegetarian friendly!

- ½ Cup of porridge oats (gluten free if required)
- 1 Cup of coconut milk
- 1 Cup of fresh pumpkin puree See my Pumpkin Puree recipe here
- Teaspoon of pumpkin spice blend See my Pumpkin Spice blend here
- 2 Tablespoons of honey/agave syrup
- 2 Tablespoons of almond butter
- 1 Teaspoon of vanilla extract
- ¼ Cup of pecans and flaked almonds for topping
Add all ingredients to a saucepan (except the pecans and almonds) and stir until combined
On a medium heat for 5 minutes until it comes to a boil
Remove from heat, transfer to 2 breakfast bowls, top with the pecans and almonds and enjoy!
