Heat the olive oil in a large saucepan on a medium heat
Add the spring onions and sautee for 2 minutes, then add the pepper, garlic, lemon, zest, rosemary and thyme and sautee for another 2 minutes
Add the pearl barley and vegetable stock, bring to the boil and then reduce to a simmer for 20 minutes, constantly stirring
Add the vegetable sausages to a baking tray and bake for 15 minutes at 180℃
Add the courgettes and kale to the pot and cook for another 10 minutes, constantly stirring until the kale has wilted slightly.
Plate up the pearl barley, top with the vegetable sausages and enjoy!
