Preheat the oven to 180℃ and line a baking tray with parchment paper.
Wash the apples and cut into cubes (I keep the skin on as it maintains more of the fibre).
To a mixing bowl add the apple, flour, coconut sugar, cinnamon, nutmeg, vanilla essence and stir to combine.
Transfer to the prepared baking tray.
To prepare the topping add the flour, oats, coconut sugar, cinnamon, coconut oil and vanilla extract and stir to combine.
Evenly spread the topping on top of the apple and place in the oven for 40 minutes.
Serve with dairy free yogurt.
