Easy Chocolate Sweet Potato & Kiwi Mousse

- 2 Large or 4 small sweet potatoes
- 4 ½ Teaspoon s of raw cocoa powder
- ¾ Tin of coconut milk
- 1 Teaspoon of vanilla essence
- 3 Tablespoons of honey/agave syrup
- 8 Small sliced of kiwi
Heat the oven to 180℃ and line a baking tray with tin foil/parchment paper
Wash the sweet potatoes, slice open at the top of each one, place on the baking tray and bake for 30 minutes
Allow the sweet potatoes to cool and peel away the skin
Add the cooled sweet potato to a bowl, mash and transfer to a blender
To the blender now add the raw cocoa, coconut milk, vanilla essence and honey/agave syrup and blend until you get a smooth mousse mixture
Transfer to 4 small bowls/ramekins, top with the sliced kiwi and enjoy!
Note: If preparing in advance, store in the fridge until serving where it will keep for 2 days
