Easy Root Vegetable & Cranberry Tarte
This Is such an simple and budget friendly dish with a beautiful combination of root vegetables and cranberry. Suitable for vegetarians

For the Vegetables
- 4 Medium sized carrots
- 4 Medium sized parsnips
- 3 Tablespoons of maple syrup
- 2 ½ Tablespoons of extra virgin olive oil
For the Pastry
- 1 Sheet of puff pastry
- 2 tablespoons of milk (dairy free if required)
Preheat the oven to 200℃ and line two baking trays with parchment paper
Wash and peel the carrots and parsnips and slice lengthways
Spread evenly across 1 of the baking trays and drizzle with the olive oil and maple syrup and bake for 30 minutes
Spread the pastry across the second baking tray, brush with the milk and bake for 10 minutes
Remove the pastry, top with the pesto, evenly spread the vegetables on top and bake for a further 15 minutes
Top with the chopped parsley and dried cranberries and enjoy
