Easy Mixed Pepper Crustless Quiches
A light and fresh vegetable salad which is perfect as a light meal or side dish. It's also naturally gluten free, dairy free, vegan and vegetarian friendly

- 1 Tablespoon Extra virgin olive oil
- 1 Cup of yellow onion, cubed
- 3 Garlic cloves, crushed
- 6 Eggs
- 1 Red pepper, cubed
- 1 Green pepper, cubed
- 2 Cups Rocket, chopped
- 1 Cup Cheese, grated
- Salt & pepper to season
Preheat the oven to 180℃ and grease small 6 pie dishes (there’s no need to grease if using silicone dishes)
In a frying pan heat the oil, add the onions and garlic, cook until lightly browned and set aside.
In a large jug, add the eggs, peppers, cheese, rocket, salt and pepper and stir to combine
Evenly divide the mixture across the pie dishes and bake for 20 minutes or until slightly golden
Leave to cool slightly for 5 minutes and you’re ready do serve, enjoy!
