Easy Mixed Pepper Crustless Quiches

A light and fresh vegetable salad which is perfect as a light meal or side dish. It's also naturally gluten free, dairy free, vegan and vegetarian friendly

Ingredients

  • 1 Tablespoon Extra virgin olive oil
  • 1 Cup of yellow onion, cubed
  • 3 Garlic cloves, crushed
  • 6 Eggs
  • 1 Red pepper, cubed
  • 1 Green pepper, cubed
  • 2 Cups Rocket, chopped
  • 1 Cup Cheese, grated
  • Salt & pepper to season

Instructions

  • Preheat the oven to 180℃ and grease small 6 pie dishes (there’s no need to grease if using silicone dishes)
  • In a frying pan heat the oil, add the onions and garlic, cook until lightly browned and set aside.
  • In a large jug, add the eggs, peppers, cheese, rocket, salt and pepper and stir to combine
  • Evenly divide the mixture across the pie dishes and bake for 20 minutes or until slightly golden
  • Leave to cool slightly for 5 minutes and you’re ready do serve, enjoy!
