Veggie Rainbow Pitta Pizzas

- 4 Gluten free pitta breads (I use the Bfree Wholegrain Pitta Breads)
- ½ Cup of passata
- ½ Cup Cheese, grated (dairy free if required)
- 12 Cherry tomatoes, halved
- ½ Cup Orange pepper, diced
- ½ Cup sweetcorn
- ¼ Cup Chives, chopped
- ½ Cup Cooked beetroot, chopped
Preheat the oven to 180℃ and line a flat baking tray with parchment paper
Evenly spread the passata and grated cheese on each of the pittas
Evenly spread the veggies in order of the ingredient listing
Place in the oven for 15 minutes
Leave to cool slightly for 5 minutes and serve, enjoy!
