Easy Free From Plum Cake
Not only is this really easy but it’s also delicious and nutritious with the beautiful of almond and plums. As a bonus it’s also gluten free, grain free, vegetarian and vegan friendly!

- 1 Tablespoon coconut oil, melted (for greasing the cake tin)
The Plums
- 10 Plums, core removed and halved
- 1 Tablespoon Maple syrup
- ¼ Teaspoon Sea Salt
The Batter
- 1 Cup Almond flour
- 3 Eggs
- 6 Tablespoons Maple syrup
- ¼ Cup Coconut oil, melted
- 1 Teaspoon baking powder
- 2 Teaspoons vanilla extract
- ¼ Teaspoon sea salt
Preheat the oven to 180℃
Greece a 7 inch spring form cake tin with a tablespoon of melted coconut oil
Evenly spread the plums across the base of the tin, top with the maple syrup and sea salt
In a large bowl add the batter ingredients, stir well to combine and pour over the plum
Bake for 45 minutes in a fan assisted oven or up to 1 hour in a non-fan assisted oven or until golden (test that it’s ready with a skewer, if it comes out clean the cake is ready)
Serve with ice cream/frozen yogurt/a dairy free alternative
