Easy Green Boost Soup
This is such a delicious and healthy recipe. For those needing a good immune boost it’s packed full of nutritious ingredients. It’s also creamy, filling and super easy to make. (gluten, dairy free, vegetarian & vegan friendly)

- 1 Cup Broccoli, chopped into florets
- 2 Stalks Celery, chopped
- 1 Large onion, chopped
- 3 Cups Spinach
- 750 ml Vegetable stock
- 1 Tin (400ml) of Coconut Milk
- 2 Cloves of garlic, chopped/crushed
- 2 Tsp Ginger
- 3 Tbsp Nutritional yeast
- Half a lemon
- Salt & pepper to taste
To a large pot add your broccoli, celery, onion, spinach, garlic, ginger, coconut milk & vegetable stock and stir to combine.
Bring to the boil and allow to simmer on a medium heat for 12 minutes
Remove from the heat and using an immersion (press down) blender, blend until you achieve a smooth consistency
Add your nutritional yeast and squeeze half a lemon and stir
You’re ready to serve, enjoy!
