Easy Blackberry & Apple Crumble
This is such an easy recipe which works as a nutritious breakfast or healthy dessert. A bonus being gluten free, dairy free, vegan and vegetarian friendly

For the Base
- 6 Sweet apples, cubed
- 2 Hand fulls of blackberries
- 2 Tsp Cinnamon
- 2 Tbsp Coconut sugar
- 2 Tsp Vanilla extract
For the Top Layer
- 2 Cups Ground oats
- ½ Cup Chopped walnuts
- ½ Cup Chopped almonds
- ½ Cup Pumpkin seeds
- 4 Tbsp Maple/agave syrup
- 2 Tbsp 2 Teaspoons of cinnamon
- 1 Tsp Vanilla extract
- 3 Tbsp Melted coconut oil
To prepare Base
To a large saucepan add your cubed apples, blackberries and two tablespoons of water and simmer on a medium heat
Add 2 teaspoons of cinnamon, coconut sugar, vanilla extract and stir to combine
When the apples have softened slightly, take off the heat and transfer to the casserole dish
To prepare the top Layer
To a large bowl add your ground oats, walnuts, almonds, pumpkin seeds, cinnamon, vanilla extract and maple syrup and stir to combine
Evenly spread on top of the apple and blackberry mixture
Pop in the oven for 20-25 minutes or until browned & enjoy!
