Easy Blackberry & Apple Crumble

This is such an easy recipe which works as a nutritious breakfast or healthy dessert. A bonus being gluten free, dairy free, vegan and vegetarian friendly

Ingredients

For the Base

  • 6 Sweet apples, cubed
  • 2 Hand fulls of blackberries
  • 2 Tsp Cinnamon
  • 2 Tbsp Coconut sugar
  • 2 Tsp Vanilla extract

For the Top Layer

  • 2 Cups Ground oats
  • ½ Cup Chopped walnuts
  • ½ Cup Chopped almonds
  • ½ Cup Pumpkin seeds
  • 4 Tbsp Maple/agave syrup
  • 2 Tbsp 2 Teaspoons of cinnamon
  • 1 Tsp Vanilla extract
  • 3 Tbsp Melted coconut oil

Instructions

  • Preheat oven to 178∞Celcius and have a casserole dish to the ready

To prepare Base

  • To a large saucepan add your cubed apples, blackberries and two tablespoons of water and simmer on a medium heat
  • Add 2 teaspoons of cinnamon, coconut sugar, vanilla extract and stir to combine
  • When the apples have softened slightly, take off the heat and transfer to the casserole dish

To prepare the top Layer

  • To a large bowl add your ground oats, walnuts, almonds, pumpkin seeds, cinnamon, vanilla extract and maple syrup and stir to combine
  • Evenly spread on top of the apple and blackberry mixture
  • Pop in the oven for 20-25 minutes or until browned & enjoy!
