Easy Carrot, Coconut & Tomato Soup
This is such a delicious and healthy recipe. With a beautiful combination of carrot, Tomato and coconut, this soup is not only packed full of the purest ingredients but it’s also creamy, filling and super easy to make.

- 2 Cups Carrots, peeled & chopped
- 400 Grams Chopped tomatoes
- 400 Ml Light Coconut Milk, tinned
- 1 Large Onion, diced
- 1 Cups Vegetable stock
- 2 Tbsp Olive oil
- 1 Tsp Turmeric
- 1 Tsp Parsley
- Salt & Pepper for seasoning
To a Large pot add the oil and cook the onions and garlic approximately 5 minutes, add turmeric and salt
Add the carrots and tomatoes and stir
Add the can of coconut milk, vegetable stock, stir and simmer for approximately 25-30 minutes or until carrots are soft.
Remove from heat. You can blend using an immersion blender or transfer to regular blender and blend until smooth.
Top with dried parsley and serve with wholegrain brown bread
